Cooked rice (preferably short-grain), thick curd (fresh yogurt), salt to taste, milk (optional, to avoid sourness), tempering spices like mustard seeds, green chillies, and curry leaves.

Let the cooked rice cool. While warm, mash it lightly for a soft texture. If storing longer, add a little milk to prevent the curd from turning sour.

Whisk the curd until smooth and add it to the cooled rice. Mix well. Adjust the consistency with a splash of milk or water, according to your preference.

In a small pan, heat ghee or oil, add mustard seeds, urad dal, chopped green chillies, grated ginger, curry leaves, and hing, and sauté until golden.
