Here is a list of vegetables that may help people with diabetes maintain healthy blood glucose levels.
Broccoli is considered good for people with diabetes because of its high vitamin C, dietary fibre, and potassium content.
Bitter gourd contains a compound called Polypeptide-P, which acts like insulin and brings glucose into the cells to produce energy. It is also a good source of nutrients like calcium, potassium, iron, and vitamin C.
Leafy vegetables like spinach, beet greens, mustard greens, and bathua are a powerhouse of nutrients like vitamins A, C, potassium, folate, & iron. They also contain magnesium which can lower blood sugar levels and regulate insulin production.
Cabbage is low in calories but high in dietary fiber, making it apt for a diabetes diet plan.
Mushrooms have a low glycemic index and high fibre content. Intake of mushrooms does not cause a drastic spike in blood insulin levels.
Green beans can help improve the body’s sensitivity to insulin. They are also low in calories.
