How to make rich and velvety Mushroom Soup at home

Winter is here! The only thing we crave is a warm , comforting and soothing soup - So here is a nourishing, rich and velvety mushroom soup recipe for you to try! -It is low in calories, high in antioxidants and good for your immunity and gut health!

Introduction

– 250g mushrooms  – 1 medium chopped onion – 3–4 minced garlic cloves  – 1 tbsp olive oil – 1 tbsp whole wheat flour or oats powder – 2 cups low-fat milk (can be almond or oat milk) or vegetable stock – Salt & pepper to taste – Fresh herbs like coriander for garnish

-Wash the mushrooms well and slice them – In a pan heat the oil then add the chopped onions and minced garlic in it – Sauteed it till it becomes translucentt

-Add the mushroom as well and cook on medium flame for about 7-8 minutes till the mushrooms turn golden brown and releases its moisture

-Take the mushroom base and blend it with little milk or vegetable stock to get that velvety texture without using any heavy cream

-Pour the mixture back to the pan then add the leftover milk, salt and pepper to it. – Cook on low flame for about 5-7 minutes and keep stirring so that lumps do not form in the soup

- Top with some sauteed mushrooms and herb – To make it a complete meal add a sourdough toast or whole wheat toast to it

– Add a scoop of pure unflavoured protein scoop to make it a high protein meal – If you are vegan add 100-150g tofu to the soup
