Winter Special Panjiri Recipe: How to Make the Traditional North Indian Sweet

Winters are incomplete with a handful of panjiri and a warm glass of milk right? The mix of wheat, ghee and nostalgia straight from your grandmother’s kitchen!

– Panjiri is an age old winter delicacy made from whole wheat flour, ghee, sugar and nut – It's known for keeping the body warm, boosts immunity and good for digestion as well during peak and chilly winter

– 1 cup whole wheat flour – ½ cup desi ghee – ½ cup powdered sugar or jaggery – 2 tbsp Gond (optional) – 2 tbsp of chopped almonds, cashew – 1 tbsp raisin – 1 tsp fennel seed – ½ tsp cardamom powder

Ingredients You'll Need

– Heat ghee in a pan – Add whole wheat flour and roast it on a low flame till it becomes deep golden brown – Carefully keep stirring so that the flour doesn't burn

Step 1-Roast the Base

– Add dry fruits, gond and fennel seeds  – Roast them for a few minutes until its golden and crispy and add cardamom powder as well

Step 2-Add Crunch & Flavour

– Turn off the flame and let the mixture cool for some time – Now add the jaggery or sugar and mix them up well so that its properly coatedAdd some water or vegetable stock so the soup reaches the thickness that you like.

Step 3-Sweeten the Mix

-Let it cool completely and store in an airtight jar -Enjoy a bowl daily with warm milk or as a healthy post meal treat but in moderation always!
