Kanji requires the following ingredients; black carrots, mustard seeds, salt, red chilli powder and turmeric

Combine all the ingredients with water in a large jar, stir well and cover it with a cotton or muslin cloth. Let the mixture sit and ferment in direct sunlight for 3-5 days for best results
